Bread and suffering! and a JustEgg copycat.

The “punishment bread of suffering” was a recipe I found on youtube for a low-carb vegan bread, with coconut flour, psyllium, baking soda and vinegar. I could tell when I was mixing it that it was too dry, and lo and behold, that didn’t change. I baked it, it never rose, it’s thick and stodgy, and hard and sad. You can eat it, but not if you actually want to enjoy your food!

The happy-bread at the top, on the other hand! That’s my old favorite recipe, but there’s more to that story!



A while back, I did some reading and bought mung beans to try to make my own egg substitute for baking. My favorite brand is JustEgg, it is the best for making my favorite low-carb rolls but it’s around $8/carton. I looked up recipes and the ones I found were all intended for “vegan scrambled eggs” rather than baking, and they had too many flavorings. so I simplified it down…And it worked!! Could use a bit of tweaking in terms of flavor but…rolls are good!
